Sweet Pepper Stew

Buca di Beppo Restaurant Recipe

1/2 medium red onion, julienne cut 
2 tablespoons chopped garlic 
1/2 cup olive oil
4 sweet bell peppers ( green, red, yellow), cleaned and julienne cut
4 tablespoons capers 
1 (14 1/2 oz.)  can plum tomatoes with juice, chopped
salt and pepper to taste

 In a large brazier over medium heat,  saute The Onion and garlic and olive oil until translucent. Add the peppers and cook until soft, about 10 minutes. Add the capers, tomatoes, Salt and Pepper. Turn the heat to low and cook  until the peppers and tomatoes are a soft stew consistency,  about 25 minutes. Remove from the Heat,  place on a serving platter and serve as a side dish.  Makes  4  to 6 serving.
