Buca di Beppo Restaurant Recipe
1 pound fresh buffalo mozzarella cheese, sliced
1 pound fresh Roma tomatoes, quartered
salt and pepper to taste
1/4 cup extra-virgin olive oil
1 tablespoon chopped fresh basil
8 fresh basil leaves
Place the sliced fresh mozzarella cheese two rows down the middle of a large serving platter. On each side of the mozzarella cheese lay the quartered tomatoes. Sprinkle salt over tomatoes and fresh mozzarella cheese. Top with lots of pepper. Evenly for the olive oil over the tomatoes and mozzarella cheese. Top with chopped fresh basil. Garnish with basil leaves. For best results, prepare 30 minutes before serving. Serve at room temperature. Makes 4 to 6 servings.
