Buca di Beppo Restaurant Recipe
3 quarts veal or beef stock
1 pound dried lentils, rinsed
1 large carrot, finely diced
1 yellow onion, finely diced
1/2 cup finely dice celery
1 pound Italian sausage, cooked and coarsely chopped
3 tablespoons chopped fresh sage
1 cup chopped ripe tomatoes
salt and pepper to taste
extra virgin olive oil for garnish
Bring the stock to a boil, then add the lentils, carrot, onion, celery, sausage and Sage. Turn the heat down to medium and cook for about 1 hour or until the soup thickens. Stir in the tomatoes, Salt and Pepper. Serve this soup in individual bowls, top with extra virgin olive oil. Makes 6 to 8 servings.
